Each course was a unique and meticulously crafted masterpiece. You could truly taste the chef's passion and dedication in every bite. The pacing was perfect, allowing us to savor each dish without feeling rushed. The service was impeccable. The staff were incredibly attentive, knowledgeable, and genuinely passionate about the food. The storytelling behind each dish added a special touch, making the experience even more memorable. The umami flavors were unlike anything we've encountered before. And the personalized dessert for my girlfriend's birthday was a truly special touch. We've dined at many Japanese restaurants, but this one stands out in every way – the food, the service, the ambiance, and the overall experience were all top-notch. We will definitely be returning soon! Highly recommend!

  • They have namasake and shiro Koji sake! Very hard to find outside of Japan. Dry aged Tuna was also fantastic and the uni was not too strong. Was also happy to see Kinmadai (Golden eye Snapper) come out in one of the dishes. It's one of my faves! They freshly grate the wasabi as well. Everything tastes so fresh and well balanced. Would eat here every month if I could.

  • It was beautiful inside, the staff were so informative and engaging, I loved hearing them describe each dish on the pre-fix menu. Each dish was delicious in its own right, and you could tell they enjoyed their work and did it well. I will definitely be going back for another special occasion, and look forward to seeing what other items the chef will pair together on future menus. Thank you so much for taking care of us on our anniversary, until we meet again!

  • wa'z Seattle is a great place to experience Kaiseki with a distinct chef's touch. The flavor profile here is simple and direct, allowing diners to intuitively enjoy the taste. Even with minimal experience with Kaiseki, you will likely appreciate the food here. It is also a very enjoyable experience to watch the chefs prepare and serve the dishes right from the open kitchen counter. However, the service leaves room for improvement. Our server forgot a few requests, and the slow start - we didn't get served any dish until about 20-25 minutes after being seated, for a couple of times of my visits. Also, personally I didn't quite enjoy their sushi (rice and rice seasoning more specifically) Overall, while the culinary execution is approachable(not the price) and high-quality, the slow start and service hiccups distracted from what could have been a flawless experience.

  • Wa’z had been on my bucket list for a long time and I’m glad I finally got to try it with some friends! You do have to make a reservation prior to going. The service was amazing and curated, food selection was diverse, and got to try different types of Japanese food. The menu is monthly and they incorporate ingredients from the Pacific Northwest with Japanese cuisine. I thought the addition of PNW flowers into the food was unique and a great homage to the mix of cultures. The chefs were also goofy and cracked jokes with the guest (look at the tuna!!). They also gave flowers since it was birthday. Would definitely come back again!!

  • We had a lovely family dinner for 8 people. We were impressed by the sake selection, the knowledgeable and courteous wait staff, and beautiful, clean, and thoughtful dinning room. Everyone in our party did the prefixed menu. I am diary free, and the restaurant graciously made accommodations for my dietary restrictions.

The textures, mix of sweet, salty, spice, and aromatic flavors sent my senses to another world. Pair you meal with the sake tasting and it's an absolutely incredible experience! 10/10 will go back!

  • My sister claims these are some of the best bites she’s had in her life. Standouts include the uni sesame tofu, Ikura corn puree, and Wagyu (perfectly done). We visited from NYC, where we have tried a few Wagyu restaurants, and were much more impressed by the quality demonstrated here
